Ingredients: 

  • 3 cups cooked penne pasta
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • ½ yellow bell pepper, diced
  • ½ red onion, diced
  • 1 cup cherry tomatoes, sliced in half
  • ½ cup cilantro, chopped
  • 1 avocado, diced (optional garnish)

Pasta Salad1

Dressing:

  • ½ cup olive oil
  • 2 tsp cumin
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • Juice of one lime

Directions: 

Cook pasta. While it is cooking, dice your veggies.

Combine peppers, onion, cilantro, and tomatoes in a large bowl.

Mix together all dressing ingredients, then pour over your pasta.

Mix thoroughly, then chill in the fridge for 1 hour.

Serve topped with avocado and/or your choice of toppings.

I think I'm going to try this one, but without the avocado. The texture is too squishy for me!
