Packed full of flavor, this Tex-Mex Pasta Salad is perfect for feeding a large group. Great for summer picnics and potlucks, and a yummy lunch or dinner!

Serves: 8 servings
Ingredients:
3 cups cooked penne pasta
½ red bell pepper, diced
½ green bell pepper, diced
½ yellow bell pepper, diced
½ red onion, diced
1 cup cherry tomatoes, sliced in half
½ cup cilantro, chopped
Dressing:
½ cup olive oil
2 tsp cumin
1 tbsp chili powder
1 tsp garlic powder
Juice of one lime
Directions:
Cook pasta. While it is cooking, dice your veggies.
Combine peppers, onion, cilantro, and tomatoes in a large bowl.
Mix together all dressing ingredients, then pour over your pasta.
Mix thoroughly, then chill in the fridge for 1 hour.
Serve topped with avocado and/or your choice of toppings.
