Coat bottom of a cast iron skillet with olive oil. Fry your sausage links until all sides are brown. Remove from pan, and set aside for later.
In the same pan, place diced potatoes, scallions and peppers. Cook on a medium heat until potatoes are brown and veggies are all soft.
Add the sausage back in the pan. In a separate bowl crack all 6 eggs and whisk. Add the eggs to the pan and cook over a medium heat until eggs are no longer runny.
Top with cheddar cheese and serve.
