Easy Vegetable Rice

Vegetable rice is a fast, easy, and healthy meal that looks and tastes great. The jasmine rice and herbs have a wonderful aroma and are an all in one pot meal (or side dish) that will surprise you.

The best part about this recipe are all the variations you can create. Use fresh or frozen veggies, add herbs, nuts or seeds for a crunch or top with cheese. You will be digging in and creating something healthy and delicious in no time.

So easy this vegetable rice recipe is all cooked in your rice cooker, so no extra dishes needed! Hooray for a one pot dinner meal that cooks itself!

Easy Vegetable Rice Recipe

Prep Time: 10-15 mins

Cook Time: 20-25 mins

Servings: Makes about 4 servings

Ingredients

Ingredients:

  • 1 cup of jasmine rice (long grain will work)
  • 1 ½ cup vegetable or chicken stock
  • 1 cup chopped broccoli
  • ½ cup diced carrots
  • ½ chopped mushrooms
  • 1 tbsp butter
  • ½ tsp salt
  • Pepper to taste
  • 2 tbsp chopped parsley
  • Shredded Parmesan (optional)

Directions:
It’s all in the prep for this one. Chop up your veggies.

In your rice cooker add rice and recommended stock.

Add in all other ingredients except parsley and parmesan. Stir and set to cook.

This rice cooker is the perfect size for this recipe, or size up to their just larger rice cooker for a bigger family. But if you don’t need a bigger size, seriously stick with the small one. It’s SO easy to clean!

Check about halfway through to make sure your liquid isn’t totally gone. If it feels dry add a little more stock. Continue to cook. Once rice is cooked add 1 tbsp parsley saving the rest for garnish. Fork rice mixture. Serve as a main course or as a side dish. Top with a little sprinkling of parsley and parmesan. Enjoy!
