Crouton Parmesan Chicken

Croutons and Paremsan combine for an amazing and so easy dinner recipe you're family will crave! Crouton Parmesan crusted Chicken!

Ingredients:

  • 16 oz package of croutons
  • 2 cloves garlic
  • 2 sprigs fresh parsley
  • 1 pound thin sliced boneless skinless chicken
  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup milk
  • 1/2 cup olive oil
  • 1 cup shredded parmesan

Directions:

Wisk together eggs and set aside.

Place flour in a bowl and set aside.

Place milk in a bowl and set aside.

In your food processor add croutons, cheese, garlic and parsley place on pulse until croutons are crumbled.

Dip each piece of chicken in milk, next flour, egg, then your crouton mix. Repeat with each piece of chicken and set aside.

Heat olive oil in a cast iron pan on a medium heat. Place a single layer of chicken in the pan at a time.

Cook 2-3 minutes or until golden brown, per side. Turn chicken over and allow to brown. Make sure your chicken is no longer pink on the inside or 160°F.

This looks fantastic, but one of my problems of making chicken is how dry mine always comes out. Do you find making them so thin fixes this problem?

You're cooking it too long. Just use thin pieces and fry for 3-4 minutes on each side until no longer pink on the inside.

That looks absolutely fantastic. I lover breaded chicken, and parmesan is one of my favorite flavors in breading. I am definitely going to make this in the near future. Yum!
