Creamy Corn and Clam Chowder Recipe

If you grew up eating clam chowder like I did you know that it can easily be one of the highest in fat but most delicious meals you will ever have.  This Weight Watchers Creamy Corn and Clam Chowder recipe is one of my new favorites because it delivers the flavor I want without all the calories I dread.

Although the recipe calls for canned clams since they are easiest to locate no matter where you live, if you have access to fresh clams feel free to substitute for an even better flavor.  This makes a smaller batch at only 1 cup per serving but you could easily double the recipe to serve the family or to have leftovers for the next days lunch.

Corn Clam Chowder recipe

Ingredients:
  • 2 Cups Cream Style Corn
  • 1 Can Minced Clams (6.5oz) undrained
  • 2 Teaspoons Old Bay Seasoning {or preferred seafood seasoning blend}
  • ½ Cup Minced of Finely chopped Onion {I use my food processor to get the finest grate/mince possible so it is smooth in the chowder}
  • ½ Teaspoon Minced Garlic
  • 1 Cup Nonfat Dry Milk Powder
  • 1 ½ Cups Water
  • 1 Teaspoon Olive Oil

 

In medium stockpot, heat oil, onions and garlic stirring for 5-7 minutes or until cooked through tender.

Mix in corn, clams and Old Bay seasoning stirring well.

In small bowl mix together milk powder and water until dissolved.  Pour into stockpot and stir well.

Cook for 7-10 minutes on medium heat stirring occasionally to prevent sticking.
