Brownie Ice Cream Sandwiches Recipe

My two oldest boys started back to school already early this August. Dreyer’s asked what makes our family smile, so I thought I’d share our family back to school tradition.

Whenever a new school year starts, we like to do something fun with our kids to celebrate their first successful week back at school and take the opportunity to talk with our boys and hear about their lives. It’s a fun tradition that we all look forward to and is just one of the ways we build memories together as a family.

This year, I decided to make a fun dessert at home with my boys to celebrate their milestone. We baked up brownies forming them into small patties to form ice cream sandwiches patties for a yummy treat!

Brownie Ice Cream Sandwiches

Ingredients: 

  • Box mix brownies or homemade brownie mix
  • Cooking Spray and spoon
  • Favorite Dreyer’s Ice Cream Flavor

Directions: 

Start by preparing your brownie mix as you normally would.

Next, spray a whoopie pie pan with cooking spray. Spoon heaping spoonfuls of brownie mix into each slot. You don’t want to overflow the cavity, but you do want it to be full.

Then spray the back of a large spoon with cooking spray and flatten out the dough to help it fill in the pan cavities so it will cook well and make relatively flat brownies for your ice cream sandwiches.

Cook your brownies for about half the normally called for cooking time. We cooked our brownies for about 18 minutes, but your mix may vary. Watch for them to be cooked through but not hard and over cooked. You do want them to be solid like the edges that normally form in a square baking dish so they will hold together when you make your sandwiches.

Now, allow your brownies to cool completely before making ice cream sandwiches. Use an ice cream scoop to scoop out a nice rounded spoonful of ice cream, leveling off the back of the scoop. Add the ice cream to the top of one brownie bite and then top with a second, slightly pressing down on the ice cream to form your sandwich. You can place all of your brownie ice cream sandwiches onto a baking sheet or in a freezer bag and store in the freezer until it’s time to serve.
