That’s because Beehive Cheese is made from the creamiest milk in Utah and lovingly crafted into superior cheese by a family who shares a passion for the artisan way of life.  Pat Ford and Tim Welsh are brothers-in-law, and passionate about their handmade cheese.  They fell in love with making cheese the old fashioned way.  They are proud to be among a handful of artisan cheese makers in Utah.  They even live within walking distance of their creamery!

My brother-in-law has a bit of an obsession with cheese.  He has a cheese book that he has read through over and over, marking off which cheeses he has tried.  My husband loves cheese, too.  So getting a variety of Beehive Cheeses to try out seemed like the perfect excuse to get together and sample.  We received the Barely Buzzed (rubbed with lavender & coffee), Promontory (Irish-style buttery cheese) , Apple Walnut Smoked (smoked with walnut shells & red apples), and TeaHive (rubbed with black tea & bergamot oil) cheeses.  I’ll tell you what – these are some high quality cheeses!  My personal favorite was the TeaHive – it was very mild and creamy.  My husband especially loved the Apple Walnut Smoked.  And the Promontory was a good, all-around favorite of the cheeses.  Everyone loved it.  We tried them with crackers, without, it was good either way!  And we’re going to use some of the leftovers in my upcoming homemade mac & cheese I’ve got planned.  Delicious!
