I love spending time in the kitchen cooking and baking. I will find just about any reason to bake a cake or make a batch of cookies! First day of school? Second week of school? Early out day? I will find any excuse! So at midnight I decided to try one of the delicious recipes in the Nielsen-Massey cookbook! I choose to celebrate making it through a long, hard day (and still working out for an hour) by making a batch of Caramel Corn! I have always purchased generic vanilla because I thought it didn’t really matter, but after trying the Nielsen-Massey Vanilla, I will never go back! It is SO worth the price and I could actually taste the difference. The recipe in the book called for a teaspoon, but I added a little more just to make sure I could taste it! It really brought out the flavor of the caramel and, with the salt, gave it just the right mix of salty and sweet. I realize baking the caramel corn in the oven while exercising kind of defeats the purpose, but it was totally worth it! I went through the whole cookbook and found all different uses for vanilla that I had never thought of! I had no idea that it could be used for main dishes like fish and pork. I can’t wait to try out a few more recipes! Until then, I have to finish my third bowl of caramel corn made with Nielsen-Massey Vanilla!
